What does Sichuan Pepper smell like?
You expect heat and get zest. Sichuan pepper smells of grapefruit and mandarin, with a light floral side close to rose. There is something electric about it, a tingle in the nose. The base is woody and slightly resinous. On skin it stays quiet and fades within an hour or so. It is a spark rather than a fire.
Origin and production
Sichuan pepper comes from shrubs in the Zanthoxylum genus, part of the citrus family. It is harvested in China, Nepal and Japan, where a related species gives sansho. Cooks use the fruit husk, which numbs the tongue. Perfumers use an essential oil or a CO2 extract. These keep the scent but not the numbing effect.
How perfumers use it
Sichuan pepper brightens a top note without burning it. It works with bergamot, rose and dry woods. Dior Sauvage (2015) places it in the heart of a very diffusive fougère. Tom Ford Oud Wood uses it to make oud cleaner and less animalic. Rose Prick, also from Tom Ford, sets it against a thorny rose. Azzaro Chrome United uses it in a calmer aromatic woody.
How to wear it
Sichuan pepper works in any season. Sauvage projects far, so two sprays are plenty at work. Oud Wood is softer and can take three in the evening.
